玉兰多酚的稳定性及其抗氧化能力

摘    要:为给玉兰多酚的开发利用提供理论依据,用50%乙醇提取玉兰多酚,检测理化因素对玉兰多酚稳定性的影响,并研究其抗氧化能力。结果表明,玉兰多酚对强直射光、热、酸、碱、Fe3+等因素不稳定,Zn2+、Al3+对多酚的稳定性影响不大。玉兰多酚具有一定的抗氧化能力和较强的清除自由基能力。

Abstract:In order to provide a theorical basis for development and utilization of Magnolia denudate,50% of ethanol solution was used for extracting polyphenols in M.denudate flower.Effects of some physical and chemical factors on the polyphenols and antioxidation ability of the phenols were tested.The results suggested that the stability of the polyphenosl were decreased by the factors of light,heat,acid,alkali and Fe3+,while Al3+ and Zn2+ had not remarkable effects on it.The polyphenols in M.denudate had strong cap...
