番茄果实色素含量和表面颜色相关性研究

摘    要:在番茄果实发育的绿熟期、转色期、成熟期、完熟期等4个时期,对不同颜色果实的表面颜色及色素含量进行测定,发现番茄果实内总叶绿素、叶绿素a、叶绿素b、类胡萝卜素与果实表面颜色呈正相关,相关系数分别为0.615,0.725,0.636,0.911。

Abstract:In tomato fruit four developing stages including maturing green,bresking stage,turning colour and riping stage,the different fruit′s surface colour and five pigment are determined.We discovered that total chlorophyll,chlorophyll a,chlorophyll b and carotenoid are bound up with the fruit′s surface colour,the correlation coefficient are 0.615,0.725,0.636 and 0.91.
