摘    要:植物脂酰-酰基载体蛋白硫酯酶(FAT)是一种终止脂肪酸合成的酶.它的基本功能就是将acyl-ACPs水解成游离脂肪酸和ACP,从而终止脂肪酸从头合成途径中脂肪酸链的延长.植物中,不同的FAT具有不同的底物特异性,直接决定植物细胞油脂中的脂肪酸的种类和数量.不同的植物组织和物种对于每种脂肪酸的需求各不相同,因此FAT在植物细胞代谢中就有着极为重要的作用.本文对FAT的种类、结构、功能、序列的分离克隆及其应用等方面进行综述.

Abstract:Plant fatty acyl-acyl carrier protein thioesterase (FAT) is a sort of enzyme which terminated the chain elongation during the de novo fatty acid synthesis by hydrolyzing acyl-ACPs into free fatty acid and ACP. In plants,each FAT has its own substrate specificity,which directly determined the amount and composition of fatty acids in the lipid pool.
