| 摘 要： | 动物性食品安全问题是食品安全的重大问题之一,关系到人类健康和公共卫生安全.通过对人兽共患病、化学污染、动物食物链污染、动物性食品加工过程污染等影响动物性食品卫生与安全的主要问题进行系统的阐述,同时对防范动物性食品安全问题采取的措施和公共卫生安全方面进行论述,从而为动物性食品安全的防范提供理论依据.
