摘    要:以普洱市景东县烟区烟叶为研究对象,通过对不同部位最佳采收成熟度烟叶定色阶段后期稳温点的研究,分析了定色后期不同稳温处理与烟叶化学成分、致香物质的关系,结果表明:变黄期采用"低温慢变黄"处理,上部成熟烟叶54℃稳温16 h、中部成熟烟叶稳温8 h、下部适熟烟叶稳温16 h的烟叶常规化学成分含量在较适宜范围,糖碱比、氮碱比较为适宜,钾氯比均大于4,接近或符合优质烟叶的特征;烟叶致香物质总量及各类中性致香物质总量明显高于其他处理,由此表明通过优化烟叶烘烤工艺能使各部位烟叶品质向有利的方向转化。

Abstract:The author studied the keeping of constant temperature at the later color -fixing stage of different parts of tobacco leaves with the best maturity collected from Jingdong county , Pu’ er city, and analyzed the relationship between the baking technolo-gies at the later color-fixing stage and the chemical compositions and aroma components of flue -cured tobacco leaves .The results showed that adopting “gradual yellowing at low temperature” baking treatment ( keeping 54℃constant temperature for 16 h for up-per leaves with complete maturity , 8 h for middle leaves with complete maturity , and 16 h for lower leaves with proper maturity ) at yellowing stage could make the contents of main chemical compositions in tobacco leaf samples be at a right level , make the sugar-nicotine ratio and nitrogen-nicotine ratio be within a proper range , and make the potassium -chlorine ratio be more than 4, which were close to or accorded with the characteristics of good -quality tobacco leaves .The total contents of both aroma components and neutral aroma substances in tobacco leaves in “gradual yellowing at low temperature” baking treatment were obviously higher than those in other treatments .Therefore , the optimized baking technologies can enable the quality of different parts of tobacco leaves to transform towards a favorable direction .
