摘    要:构成青花菜花球的花蕾和花茎具有明显不同的衰老进程。通过比较两者在衰老进程中呼吸速率及某些有机物代谢的变化,表明衰老快的花蕾具有高的呼吸速率,在形态衰老转捩期前出现呼吸跃变,叶绿素、还原糖和总糖、蛋白质、维生素C等含量迅速下降,游离氨基酸迅速增加,衰老慢的花茎上述物质分解代谢强度和呼吸速率明显低于花蕾。分解代谢的强弱是决定器官衰老速率的重要生理因素,花蕾中高Vc含量不能延缓其衰老进程。

Abstract:It is obvious that the senescent process in the flower buds of broccoli is quite different from that in the flower stems. The comparison between the changes of respiration rates and some organic metabolism in these sensecent processes shows that the quick-aging flower buds respire at a higher rate, reaching respiratory climacteric with a rapid decrease of chlorophyll, reducing sugar, total sugar, protein and vitamin C, and a rapid increase of free amino acid inside the buds before the morphogenic senescence arises, while the slow-aging flower stems respire at a much lower rate with apparently weaker catabolic intensity of the above substances inside the stems. The intensity of the catabolism is an imPOrtant physiological factor that decides the speed of organic senescence. The rich content of vitamin C in the flower buds can not defer the process of senescence.
