紫外线系统净化近江牡蛎(Crassostrearivularis)中细菌的研究

摘    要:为保证食品安全,研究采用紫外线系统杀菌海水,以近江牡蛎为试验材料,经人工接菌、清洗、粗选等流程后,进行各净化处理条件试验及正交试验筛选,以大肠菌群和菌落总数为指标,探讨净化的最佳环境条件.结果表明,利用紫外线系统能达到海水杀菌的效果,可用于贝类净化.正交试验最优组合为第6组A2 B3 C1 D2(温度25℃、盐度25‰、换水率1次/4h、贝水比1∶6)和第7组A3B1C3D2(温度30℃、盐度15%、换水率1次/8 h、贝水比1∶4).但综合考虑净化效果及经济效益,可选取温度30℃、盐度25‰、换水率1次/4h、贝水比1∶4,净化时间36 h作为近江牡蛎细菌净化的优化条件.
