摘    要:纳他霉素是一种天然抗真菌的食品生物防腐剂。介绍了纳他霉素的物理化学性质、活性和稳定性、感官性状、抑菌特点及作用机理,综述了它在乳制品、肉制品、果蔬及其制品和焙烤食品等工业中的应用,并对应用中存在的问题及发展趋势进行了展望,以期为纳他霉素的进一步研究和应用提供参考。

Abstract:Natanycin is a kind of natural anti-epiphyte bio-preservative used in food industry.The physical and chemical properties,activity and stability,sense properties,anti-microbial properties and active mechanism of natanycin were introduced in this article.And the application of natanycin in food industry such as dairy product,meat product,fruit and vegetable product and beak product were summarized.A prospect for the problem and trend of development in application of natanycin was given.A reference was offered...
