贵阳市市售猪肉中食源性致病菌分离鉴定

摘    要:为了解贵阳市市售猪肉中食源性致病菌的污染情况,采集贵阳市市售猪肉样品60份,按照相关国家标准分离鉴定样品中的沙门氏菌、志贺氏菌、单核细胞增生李斯特菌、金黄色葡萄球菌、肠出血性大肠杆菌。结果表明:样品中食源性致病菌总检出率为13.33%,其中沙门氏菌检出率为6.67%,金黄色葡萄球菌检出率为3.33%,志贺氏菌检出率为1.67%,单核细胞增生李斯特菌检出率为1.67%,肠出血性大肠杆菌未检出。说明贵阳市市售猪肉中沙门氏菌的污染率最高,金黄色葡萄球菌、志贺氏菌和单核细胞增生李斯特菌也存在一定污染情况。

Abstract:To investigate the pollution of five food-borne pathogenic bacteria in retail pork of Guiyang city, the sixty pork samples were collected from supermarket and open fairs. The five food-borne pathogenic bacteria in samples were isolated and identified according to the national standard. The result showed the total detection rate of five food-borne pathogenic bacteria was 13.33%, among which the Salmonella, Staphylococcus aureus, Shigella and Listeria monocytogene were 6.67%, 3.33%, 1.67% and 1.67% respectively. Escherichia coli O157∶H7 was not found. The pollution rate of Salmonella in retail pork in Guiyang city was highest among five food-borne pathogenic bacteria, and Staphylococcus aureus, Shigella and Listeria monocytogene were still detected.
