落葵红色素作为酸碱指示剂的研究

以落葵果为原料提取红色素,测定落葵红水溶液的变色pH值为8.5～10.4,与酚酞相同,且变色灵敏,可以作为酸碱滴定指示剂并成为酚酞指示剂的代用品。用落葵红与酚酞一起作为对食品酸味剂和膨松剂分析指示剂的实验结果表明,落葵红指示酸碱滴定终点变色明显,与酚酞相当。落葵红指示剂宜现用现配,而制成的浸膏在无水乙醇密封下避光避热可长期保存。落葵红用作指示剂的安全性高,具有实用价值。

Research on Basella alba L. Red Pigment Act as Acid-base Indicator

Extracted red pigment with basally alba fruit.Determined the color variation of basally alba red pigment in the different pH solution.The pH scope in color variation is 8.5~10.4,same as the phenolphthalein,and the color variation sensitive to pH.It may be substitute for phenolphthalein act as acid-base indicator.Used it and phenolphthalein act as indicator,analyzed food sour matters and the swelling agent,the color transform of end point of acid-base titration is obvious,this effect same as the phenolphthalein.The basally alba red pigment indicator suitable to preparation when use it,if made it to extracts under the conditions of airtight with alcohol and avoid the light and hot,it can keeping in storage over a long period of time.It has security and practical value.
