蜜环菌保健饮料的研制

摘    要:以蜜环菌菌丝体及其发酵液为主要原料,采用正交实验对稳定剂及饮料配方进行优化。结果表明:蜜环菌保健饮料的最佳配方为蜜环菌菌汁10%、蔗糖10%、柠檬酸0.3%,稳定剂CMC为0.15%。

Abstract:Taking mycelium and broth from Armillaria mellea as main raw material,the formula of health drink and stabilizer were determined by orthogonal test.The results indicated that the best formula was 10% Armillaria juice,10% sucrose and 0.3% citric acid,and stabilizer was 0.15% CMC.
