| 摘 要： | 桑椹含有多种生物活性物质,其中的多酚、黄酮类物质能够抗脂质过氧化,起到延缓衰老及润肤美容的功效。利用紫外分光光度法,对生产上大面积栽植的4个果桑品种鲜桑椹中的总多酚、总黄酮含量以及总还原活力进行测定,4个品种鲜桑椹中的总多酚含量以及氧化还原能力大小依次为红果2号、大10、5801、红果1号,总黄酮含量大小依次为红果2号、大10、红果1号、5801,其中红果2号桑椹中的总多酚、总黄酮和维生素C的质量比分别为3.683、4.095、3.164mg/g。测定结果可作为桑椹制品原料选择的参考依据。
