温州蜜柑果实发育与贮藏过程中活性氧代谢研究

摘    要:[目的]了解柑橘果实发育和贮藏过程中活性氧代谢的变化规律。[方法]以国庆1号温州蜜柑(Citrus unshiu Marc)为材料,研究果实发育和贮藏过程中抗氧化酶活性、活性氧和抗氧化剂含量的变化。[结果]过氧化氢酶(CAT)、过氧化物酶(POD)和超氧化物歧化酶(SOD)活性在成熟过程中幼果期最高;过氧化氢(H2O2)含量在果实膨大期以后稳定增加,贮藏20d后又表现为下降趋势;谷胱甘肽(GSH)含量在幼果期和膨大期之间差异板显著(P〈0.01);抗坏血酸(AsA)含量最大值出现在果实膨大期,贮藏期含量没有差异。[结论]该研究为柑橘的栽培、果实的贮藏及其保鲜提供了参考。

Abstract:[Objective]The aim was to study the change laws of active oxygen metabolism during the development and storage process of Citrus unshiu fruits.
