摘    要:桑椹是一种具有较高营养和经济价值的果品。本文介绍了桑椹的主要化学成分及其所含的活性物质;分析了桑椹采后生理生化的变化;综述了目前桑椹果实贮藏保鲜主要技术方法的研究进展;展望了桑椹深加工产品的开发前景及采后保鲜技术研究的发展方向。
