| Abstract: | Detection of nitrite is an important testing item in food.This paper focused on the measuring principle,detection limits and characteristics of colorimetry,ion chromatography,catalytic photometry,nuclear magnetic resonance light scattering method,polarography and other methods of detection of nitrite in food.It also reviewed the research progress of the different testing methods. |
