大青山山羊肉的品质特点及其产业发展前景

摘    要:论文对大青山山羊肉的营养特征、质量指标和风味特点进行了综述,表明其肉质细嫩,蛋白质含量高,脂肪含量低,营养价值高,最佳宰杀年龄在2.5-3.5岁之间。依据大青山山羊肉风味浓郁,嚼劲十足等特点,围绕大青山山羊肉的价值优势和经济优势,提出了要加大品牌建设步伐、加快电子商务销售力度、强化溯源体系,开拓内蒙古大青山山羊肉产业发展的新思路,以期为促进内蒙古大青山山羊这一优良类群更好地发展提供支持。

The Front View of Industrial Development Based on The Quality of Daqingshan Goat Meat
Abstract:The paper summarized the nutritional characteristics, quality and flavor of the Daqingshan goat meat. It showed that the meat was tender, with high protein contentment, low fat and high nutritional value. The best slaughter age was between 2.5 and 3.5 years old. Based on the characteristics of the meat, such as rich flavor and full chewiness, and centering on the value and economic advantages, this paper puts forward a new idea to increase the pace of brand construction, accelerate the on-line sales, strengthen the traceability system, and open up the development of Inner Mongolia Daqingshan mutton industry, in order to provide support for the better development of Inner Mongolia Daqingshan mutton, an excellent group.
