摘    要:目的]对"黑美人"马铃薯中原花青素的提取工艺进行优化,并研究其稳定性。方法]以"黑美人"马铃薯为原料,采用乙醇提取法,研究了料液比、乙醇体积分数、浸提温度和浸提时间对原花青素提取效果的影响,同时研究了pH、温度和贮藏条件对"黑美人"马铃薯中原花青素稳定性的影响。结果]"黑美人"马铃薯中原花青素最佳提取条件为:料液比1∶9,乙醇体积分数75%,浸提温度60℃,浸提时间40 min;pH、温度和贮藏条件均不同程度地影响其稳定性。结论]在实际应用中要注意选择"黑美人"马铃薯的贮藏条件,从而使其中的原花青素发挥最佳功效。
