摘    要:目的]研究增塑剂的浓度、干燥温度对大豆蛋白膜性能的影响,以提高膜的阻油性能与机械性能。方法]以大豆分离蛋白为成膜材料,通过改变增塑剂浓度(1%、2%、3%)以及干燥温度(50℃、60℃、70℃),测定透油系数、抗拉强度和断裂伸长率,分析增塑剂浓度、干燥温度对膜机械性能和阻油性能的影响。结果]增加增塑剂用量可提高膜的断裂伸长率、降低膜的抗拉强度,但是对阻油性能影响不明显,适宜的增塑剂浓度为2%;对膜液进行热处理,可以提高其抗拉强度和断裂伸长率,但会造成透油系数增加,适宜的成膜温度为60℃。结论]该研究改进了大豆蛋白膜的阻油性能与机械性能。

Abstract:Objective] The effects of plasticizer concentration and drying temperature on the oil resistance and mechanical properties of film of soy protein isolate were studied Method] Soy protein isolate was taken as the film-forming materia.The oil absorption rate,tensile strength and elongation at break were tested through changing the plasticizer concentrations(1%,2%,3%) and drying temperature(50 ℃,60 ℃,70 ℃). Results] When the plasticizer concentration was 2%,the tensile strength and oil resistance were best.When heat treatment was done on the membrane liquid,the suitable drying temperature was 60 ℃.Conclusion] This study improved the mechanical properties and barrier properties of soy protein isolate film.
