Abstract:The preparation technology of water soluble dietary fiber(SDF) from peanut stem by ultrasonic wave and the antioxidant activity of SDF were investigated.By single factor and orthogonal experiments,the results showed that the optimal conditions for ultrasonic wave extraction of SDF were the ultrasonic wave frequency of 28kHz,the reaction temperature of 80℃,the reaction time of 120min and the ultrasonic power of 240W.Under the optimum technological conditions,the yield of SDF was 5.35%,the percentage content of the non-starch polysaccharides(NSP) in SDF was 65.49% and the average comprehensive score of SDF was 45.44%,respectively.In the end,the experiments of SDF antioxidant activity were carried out.The results indicated that SDF have remarkable antioxidant activity for scavenging the hydroxyl radicals,super oxide anion radicals and DPPH radicals,iron reducing activity and molybdenum reducing activity.Application of ultrasonic wave extraction SDF is a feasible and novel route for broadening of the application fields of peanut stem and high-value utilizing peanut stem.
