冬枣果皮红色素的紫外可见光谱分析

用紫外可见光谱分析,初步判断冬枣红色素的组成为类黄酮(包括黄酮类)、花色素苷类。通过对冬枣果皮红色素的NaOH提取液进行不同处理,对果实色素的稳定性进行了研究。在不同温度下水浴2 h,目测其外观颜色随着温度的升高而逐渐变浅,随着温度的升高,其吸光值呈现逐渐减小的趋势,温度越高,色素损失越多。进行避光、直射光、室内散射光处理发现色素对光照较敏感,易损失,应进行避光保存。供试的2种金属离子,钾离子和钙离子在各吸收峰处都有上升的趋势。红色素对氧化还原剂的处理比较稳定。不同pH值对冬枣色素的颜色变化及稳定性有一定影响。

The Studies on the Stability of Pigments from Winter Jujube Peel

This paper analyzed winter jujube pigment with UVvisible,determined that red pigment was composed with flavonoids and anthocyanin.With treatment of NaOH distilling,stability of fruit pigment was studied.The results showed high that water temperature can reduce its absorbance.The higher the temperature is,the lower absorbance is.With treatment of light avoidance,straight light,dispersion light,it was discovered that the red pigment was susceptive to light,the pigment should be stored in no light environment.Among 2 cations,K~ ,Ca~(2 ) have a increasing at the absorption peak.Reductant-oxidant has little effect on stability of the pigment.Different pH also affected the colour change and stability of red pigment of winter jujube peel.
