土壤水分对稻米品质影响的研究进展

摘    要:稻米品质的优劣,除了受自身的遗传基因控制外,还受到温、光、水等环境因素影响。本文从稻米碾磨品质、外观品质、蒸煮食味品质和营养品质四个方面,综述了土壤水分对稻米品质影响的研究状况,并以此为依据对水分亏缺条件下稻米品质的研究提出了一些建议。

Abstract:Rice quality not only was effected by its genetic gene, but also by environment factors including temperature, light, water and so on. This paper reviewed the recent advance on the effect of soil moisture on rice quality from the followed four aspects: milling quality, appearance quality, cooking and eating quality, nutritional quality. Furthermore, some suggestions for the research of rice quality in the condition of water deficit were put forward.
