摘    要:以俄罗斯鲟、史氏鲟、西伯利亚鲟、达氏鳇4个品种的19尾活体鱼为试验材料,按照鱼体质量>10 kg和<5 kg分组进行解剖,得出了13个解剖部位的质量分布情况。试验结果表明,鲟鱼的出肉率约50%,且史氏鲟最高,其他依次为西伯利亚鲟、俄罗斯鲟、达氏鳇。

Abstract:19 fish samples from 4 different sturgeon species including Russian sturgeon(Acipenser gueldenstaedti),Amur sturgeon(A.schrencki),Siberian sturgeon(A.baeri) and Siberian huso sturgeon(Huso dauricus) were divided into two groups on the basis of body weight >10 kg and <5 kg and the distribution of dressed fish was determined in 13 different dissection parts.The results showed that the fish had the dressed rate of about 50% with the descendant order as Amur sturgeon>Siberian sturgeon>Russian sturgeon>Siberian huso sturgeon.
