板栗短雄花序芽变的坚果营养成分分析

摘    要:笔者研究板栗短雄花序芽变坚果的营养成分,包括总糖、蛋白质、脂肪、淀粉、维生素、氨基酸和矿质元素。结果表明:板栗芽变坚果的营养成分具有高蛋白低脂肪、高钾低钠、赖氨酸和组氨酸含量高的特点;短雄花序芽变坚果的总糖,VB2,VB3,VB6,VB9,VC,VE,Ca,Fe,Cu,Zn和16种氨基酸含量极显著高于对照燕山红栗(P<0.1)。

Abstract:This paper studied the nutrition component of shorter catkins sport in Chinese chestnut,including total sugar,protein,fat,starch,vitamin,amino acid and mineral element.The result indicated the nut of sport chestnut with the characteristics of high protein,low fat,high potassium,low sodium,high lysine and high histidine;total sugar,Vitamin B2,Vitamin B3,Vitamin B6,Vitamin B9,Vitamin C,Vitamin E,calcium,iron,copper,zinc and sixteen kinds of amino acid were very significantly higher than those in the contrast Yanshanhongli(P<0.1).
