烟夹密集烤房配套烘烤工艺研究

目的]研究烟夹密集烤房配套烘烤工艺,为烟夹烤房的推广应用创造良好条件。方法]通过烟夹密集烤房不同烘烤工艺对比试验,确定烟夹密集烤房配套的烘烤技术。结果]原有的烟夹密集烤房配套烘烤技术采取的低温变黄、快速吹干,即＂堆黄吹干＂烘烤工艺并不适应于福建基地烟叶的烘烤特性。采用相对高温变黄,凋萎期＋低湿慢烤的优化后配套烘烤技术可使烟叶失水和变黄程度一致,很好地解决了烟夹烤房的烘烤问题,不仅有利于改善烟叶外观质量,使烤后烟叶组织结构较疏松,色度较强,并减少僵硬、挂灰和平滑等现象,也有利于改善烟叶评吸质量,使烤后烟叶吃味纯正,杂气较轻,香气质好,香气量较足,烟气饱满浓郁,余味较舒适。结论]烘烤工艺是影响烟夹密集烤房烟叶烘烤质量的关键因素,对烟夹烤房的推广应用起着决定性的作用。

Research on Matching Baking Process for Dense Curing Barn with Smoke Clip

Objective] The study aimed to research the matching baking process for the dense curing barn with the smoke clip so as to create the good conditions for the popularization and application of the curing barn with smoke clip.Method] The matching baking technology for the dense curing barn with the smoke clip was confirmed through the contrast tests on different baking processes for the dense curing barn.Result] The original matching baking technique for the dense curing barn with the smoke clip,which used the baking process of turning the tobacco leaves into the yellow at low temperature and blowing them into the dry quickly,couldn't adapt to the baking characteristics of the tobacco leaves from Fujian base.Using the optimized matching baking technique of turning the tobacco leaves into the yellow at relative high temperature,increasing the languish period,and baking slowly at low humidity after turning the fire temperature could be consistent in the water loss and yellow-turning level of tobacco leaves,thus solving the baking problem for the curing barn with smoke clip,which was not only beneficial to improve the appearance quality of the tobacco leaves,making the loose organization structure of the roasted tobacco leaves,stronger chroma and reducing the phenomenon such as the stiff,and ash-hanging and smooth,but also beneficial to improve the smoking quality of tobacco leaves,making the roasted tobacco leaves have the pure smoke flavor,lighter miscellaneous gas,good and enough frangrance,rich smoking gas and comfortable aftertaste.Conclusion] Baking process was the key factor affecting the baking quality of tobacco leaf in the dense curing barn with the smoke clip and played a decisive role on the popularization and application of the curing barn with the smoke clip.
