采购视角下的嵌入性食品供应链风险问题研究——以保定A超市的蔬菜采购为例

本研究以供应链是由具体的各种关系构成的一种嵌入性结构为理论依据,以供应链核心节点的采购活动为研究起点,从采购的视角,以河北省保定市某超市的蔬菜采购作为研究对象,建立价格变化下的采购订货模型、非假期采购订货模型、假期采购订货模型以及考虑季节因素的采购订货模型,得出超市采购人员对蔬菜的采购应该根据4种模型区分不同的情况采取不同的采购订货策略,以此来降低嵌入型食品供应链的风险。

Research of Food Supply Chain Risk Issues from the Perspective of Purchasing --in the Case of A Supermarket of Baoding

This paper based on an embedded structure composed of a variety of relationship specific theory, starting at the purchasing of supply chain core, supply activities of upstream suppliers and food supply chain, from the perspective of purchasing, in the case of a supermarket＇s vegetable procurement of Baoding city, to established the model of price changes, non holiday, holiday and seasonal factors. In order to reduced the food supply chain risk, the supermarket procurement officers should distinguish different circumstances of different ordering strategy on vegetable order.
