高粱壳非水溶性膳食纤维的提取及其特性研究

摘    要:目的]确定高粱壳非水溶性膳食纤维的提取条件及理化特性。方法]以高粱壳为材料,用碱法提取高粱壳非水溶性膳食纤维,以料液比、碱液浓度、提取温度及提取时间为因素进行正交试验,确定最佳提取条件;并考察了提取的高粱壳非水溶性膳食纤维的膨胀性和持水性。结果]高粱壳非水溶性膳食纤维的最佳提取条件为:料液比1∶30,提取温度70℃,NaOH质量分数为4%,水解时间90min。对提取物的持水性和膨胀性研究表明,产品持水性、膨胀性随温度增加而增加,随着氯化钠、蔗糖和山梨酸钾浓度的增加而降低。结论]确定了高粱壳非水溶性膳食纤维的最佳提取工艺。

Study on Separation Process and Physicochemical Characteristics of Water Insoluble Dietary Fiber from Sorghum Shell

Abstract:Objective ] The study aimed to determine the best extraction and the physical and chemical characteristics of the water insoluble dietary fiber from sorghum shell. Method] With sorghum shell as material,the water insoluble dietary fiber was extracted with caustic solution. The orthogonal test was designed to determine the best extracting condition with the ratio of material to solution,alkaline concn,reaction temperature and reaction time as the factors. The water holding capacity and expansion capability of IDF were also studied. Result ] The best extracting conditions of IDF were as follows: material to water ratio (g/ml) 1∶30,extraction temperature 70 ℃,extraction time 90 min and sodium hydroxide concentration 4%. The water holding capacity and expansion capability of IDF increased with temperature,but decreased with concentrations of sodium chloride solution,sucrose solution and potassium sorbate solution. Conclusion] The study provided the references for extracting water insoluble dietary fiber from orghum shell.
