双孢蘑菇栽培质量安全调查与分析

双孢蘑菇是一种美味的营养保健食品，其食用安全问题引起人们广泛关注。本文对邹城市双孢蘑菇的生产原料和产品的有害重金属和农药残留进行了调查与分析。结果表明，双孢蘑菇子实体中重金属和农药残留都未超过国家标准，产品质量比较安全。栽培原料中秸秆和水的重金属含量少，牛粪和覆土重金属含量较高，是重金属的主要来源。双孢蘑菇原料中农残极少，只在覆土中检测到部分杀虫农药，出菇管理过程中农药的选用和使用方法是控制农药残留的关键控制点。
