| 摘 要： | 普洱熟茶中存在多种细菌,采用高压脉冲电场对来自云南省不同地方的8种普洱熟茶样品选择不同强度、不同频率和不同作用时闻进行了灭菌处理.结果表明,处理前后其细菌总数发生了很大变化,以B组效果最好,平均灭菌率为92%,合适条件下灭菌串近100%.高压脉冲电场可为普洱熟茶的灭菌提供一条新途径. |

| Abstract: | For fermented puer-tea,many different type of bacteria existed in it.In this paper,8 types of fermented puer-tea from different place under high pulsed electric field(HPEF) were treated for sterilization,the conditions of HPEF we chose were under different intensity,different frequency and different long time.The results showed that total number of bacteria greatly changed after treatment,the average sterilization rate was 92 % and the sterilization rate was nearly 100% under exact conditions.According to t... |
