高原环境罗斯308肉鸡生长性能、屠宰性能及肌肉品质的测定分析

摘    要:对云南高原地区引进培育的罗斯308商品肉鸡的生长性能、屠宰性能、肌肉品质等各项相应指标进行测定分析.结果表明,42日龄罗斯308肉鸡的成活率为97.9%,日增重53.36 g,料重比为1.75;全净堂率为79.85%,胸和腿肌pH值屠宰后45 min为6.03,宰后24 h pH值降低至5.90,降幅较小,嫩度为23.87 kg,失水率为17.23%,熟肉率为74.14%,表明罗斯308肉鸡饲养周期短,因而肉质鲜嫩;氨基酸分析除苯丙氨酸(4.38%)、赖氨酸(6.99%)和组氨酸(3.09%)的含量明显较高外,其它氨基酸含量均低于各种地方品种鸡.

Abstract:The performance of growth,performance of slaughter and muscle quality and other related obesity parameters of 42-day-old Ross 308 Broiler,which was introduced into Yunnan plateau,were determined.The results showed that the survival rate,average daily gain,the ratio of feed to gain and the brawn dressing ratio were 97.9%,53.36g,1.75,79.85%,respectirely.The pH value of chest and leg muscle after slaughtered by 45min was 6.03,after 24 h was 5.90,so the decrease of the pH value was low.Tenderness,water loss and cooked meat percentage were 23.87 kg,17.23%,74.14%,respectively and they showed that the meat quality of Ross 308 Broiler was fresh,because of its short breeding cycle.Except for the contents of phenylalanine(4.38%),lysine(6.99%),histidine(3.09%) are obviously higher than many other kinds of native broiler,other amino acids are all lower.
