牛至精油-介孔纳米二氧化硅/海藻酸钠复合膜对双孢蘑菇保鲜效果研究

摘    要:为了研究牛至精油-介孔纳米二氧化硅/海藻酸钠复合膜对双孢蘑菇保鲜效果的影响,本研究以海藻酸钠、介孔纳米二氧化硅(mesoporous silica nanoparticles,MSNPs)和牛至精油(oregano,OEO)为原料制备抑菌复合膜,对双孢蘑菇进行包装,以未添加OEO-MSNPs的纯海藻酸钠膜为对照组,未经包装的双孢蘑菇为空白对照,研究其在4℃条件下对双孢蘑菇品质的影响。结果表明:OEO-MSNPs/海藻酸钠复合膜可以保持双孢蘑菇良好的品质,显著抑制子实体的呼吸速率,并对贮藏过程中双孢蘑菇的失重率、氧化褐变、菌落总数的增加以及硬度、抗氧化物质的减少有一定的抑制作用,同时也提高了过氧化物酶、超氧化物歧化酶、过氧化氢酶的活性,抑制了多酚氧化酶活性。在4℃贮藏条件下OEO-MSNPs/海藻酸钠复合膜可将双孢蘑菇的保鲜期延长至12 d,对延长蘑菇的货架期也有积极作用。

Abstract:In order to study the effect of oregano-mesoporous silica nanoparticles/sodium alginate composite film on the preservation of Agaricus bisporus,the antibacterial composite film was prepared with sodium alginate,mesoporous silica nanoparticles and oregano essential oil as materials to package Agaricus bisporus.The effects of different treatments group on the quality of Agaricus bisporus under 4℃were studied by using without OEO-MSNPs as control group and unpackaged Agaricus bisporus as blank control group.The results showed that composite films maintained the good texture quality,inhibited the respiration significantly,and possessed certain inhibitory effects on the increase of weight loss,oxidative browning,the number of microbial growth,and the decrease of hardness and antioxidant substances content in the process of storage.In the meanwhile,this treatment could improve peroxidase,superoxide dismutase and catalase activity,and inhibit the increase of polyphenol oxidase activity.The storage time could be extended to 12 days by Agaricus bisporus packaged with the OEO-MSNPs/sodium alginate composite film at 4℃,which had a positive effect on prolonging the shelf life of Agaricus bisporus.
