果蔬氧化还原防御系统研究进展

摘    要:果蔬的成熟和衰老受体内氧化还原防御系统的调控,果蔬体内的氧化还原防御系统能够及时清除自身产生的活性氧并维持动态平衡,然而逆境胁迫将引起活性氧的过量积累,导致果蔬发生氧化损伤,进而加速其衰老进程,直接影响果蔬采后的品质和贮藏时间。本文总结了采后果蔬活性氧产生及其诱导果蔬品质劣变的机理,分析了果蔬体内的酶促抗氧化体系和非酶促抗氧化体系,并阐明了其清除活性氧的机制,为维持果蔬采后的贮藏品质提供参考。

Abstract:The maturation and senescence of fruits and vegetables are regulated by the redox defense system.The redox defense system in fruits and vegetables can clear the active oxygen produced by themselves in time and maintain their dynamic balance.However,the stress of adversity will cause excessive accumulation of reactive oxygen species,leading to oxidative damage of fruits and vegetables and accelerating their senescence process,directly affecting their postharvest quality and storage time.This article summarized the mechanism of the production of active oxygen and inducing quality deterioration of fruits and vegetables,analyzed the enzymatic antioxidant system and non-enzymatic antioxidant system in the fruits and vegetables,and clarified their mechanism of removing active oxygen,providing a reference for maintaining the storage quality of harvested fruits and vegetables.
