摘    要:以壳聚糖、甲基纤维素(MC)和单甘酯为复合涂膜材料,按照 L9 (33) 正交试验优化涂膜配方,研究了不同浓度涂膜后黄瓜贮藏过程中的生理变化,从而确定最优涂膜浓度。结果表明:壳聚糖复合膜的膜特性良好,涂布均匀,可有效保持黄瓜的感官品质,降低失重、呼吸强度、硬度;减少可溶性固形物及叶绿素含量的损失;壳聚糖的保鲜效果达到显著水平。复合膜的最优涂膜浓度为壳聚糖 2.0 %、单甘酯 0.2 %、MC 0.2 %。

Abstract:Using different concentrations of chitosan, methylcellulose and single glyceride, different ratios of chitosan composite membrane coating were made to study the physiological changes of cucumber based on the orthogonal experiment of L9 (33). The results indicated that chitosan composite membrane characteristic was good, which could effectively maintain the cucumber sensory quality, reduce weightlessness lose, respiratory intensity and hardness of cucumber, and could also inhibit the loss of soluble solid and chlorophyll content. The preservation effect of chitosan achieved the remarkable level. Optimized concentration of the chitosan composite film was the ratio of 2.0 % chitosan, 0.2 % single glyceride and 0.2 % methylcellulose.
