黑枸杞花青素的研究进展

摘    要:花青素作为一种天然的水溶性色素具有多种生物活性,主要是由于他自身的结构和化学成分所导致的,在人类健康的发展史上发挥着不可忽视的作用。而黑枸杞因花青素含量超过了绝大数其它含花青素的植物而被人们所关注。本文主要介绍了黑枸杞花青素的基本特点、提取方法以及黑枸杞花青素的基本作用,为以后黑枸杞的食品开发以及药性研究提供理论基础。

Abstract:As an nature water-soluble pigments, lycium ruthenicum murry anthocyanin extracts has various biological activities which are mainly due to its own structure and chemical composition, and plays a momentous role in the history of human health development. Lycium ruthenicum is focused on its anthocyanin content that exceeds most other anthocyanin-containing plants. Therefore, the principal dimensions of this study are the basic characteristics, extraction methods and basic functions of lycium ruthenicum murry anthocyanin extracts, to provid theoretical basis for food development and drug research of lycium ruthenicum.
