精制玉米蛋白粉包埋DHA的研究

摘    要:对精制玉米蛋白粉包埋DHA(docosaheraenoic acid)进行单因素试验,得出了鱼油粉末化较为理想的乳化液工艺参数:乳化剂的HLB大于9.6,添加量1.5%-2.5%,乳化温度60℃-80℃,水分的添加量为70%-75%,比较理想的DHA和精制玉米蛋白粉的比例为1:(3-5)。

Abstract:The process of embedding DHA using refined maize protein powder was studied. The reasonable technological parameters of emulsion during fishoil being powdered were obtained. HLB of emulsifier is more than 9.6; its addible quantity is 1.5%~2.5%;tempe rature of emulsifying is 60℃~80℃;addible quantity of moisture is 70%~75%. Refined maize protein powder was proved to be the suitable material
