摘    要:祁门红茶(以下简称祁红)独特复杂的香气类型被称为“祁门香”。为了研究祁红主要挥发性香气物质与呈香特征,以祁门县历口镇与古溪乡共10份祁红茶样为研究对象,利用SPME-GC-MS技术提取测定茶样的香气成分。结果表明,茶样中共同检测到的31种香气物质,主要包括12种醇类成分(相对含量为67.54%)、11种醛类成分(16.93%)和3种酯类成分(11.36%),它们都表现出花果香且阈值低,对“祁门香”的构成具有重要贡献。分析了“祁门香”的主要贡献因子,主要以香叶醇、苯乙醛、芳樟醇、芳樟醇氧化物、2-己烯醛、正己醛、苯甲醇、水杨酸甲酯等8种香气物质为主,具有甜香、花果香、清香为主的馥郁香气。

Abstract:The unique and complex aroma type of Keemun black tea(hereinafter referred to as Keemun)is called Keemun aroma.In order to study the main volatile aroma matter and characteristics of aroma,10 samples of Keemun from Likou town and Guxi township of Qimen County were taken as the research object.SPME-GC-MS technology was used to extract and determine the aroma components of the samples.The results showed that common 31 kinds of aroma compounds were detected in the samples,mainly including 12 kinds of alcohols(relative content is 67.54%),11 kinds of aldehydes(16.93%)and 3 kinds of esters(11.36%),all of which showed flower and fruit fragrance with low threshold value,and had important contribution to the composition of Keemun aroma.The main contribution factors of Keemun aroma were analyzed.It was a kind of strong fragrance mainly composed of sweet fragrance,flower and fruit fragrance and delicate fragrance,mainly including 8 kinds of aroma substances,such as geraniol,phenylacetaldehyde,linalool,linalool oxide,2-hexenal,n-hexanal,benzyl alcohol and methyl salicylate.
