棘托竹荪菌盖营养成分分析与评价

摘    要:采用国标法测定棘托竹荪菌盖的营养成分和氨基酸组成,并与竹荪菌体进行比较。结果表明:棘托竹荪菌盖的氨基酸总量、必需氨基酸含量分别为31.34%和12.95%,均是竹荪菌体的2倍,但其蛋白质的化学评分(CS)结果低于菌体,而氨基酸评分(AAS)、必需氨基酸指数(EAAI)、生物价(BV)、营养指数(NI)分别为65.71、76.58、71.77、29.05,均高于菌体部分。实验表明棘托竹荪菌盖有较高的营养价值,可作为蛋白源,以其为原料开发蛋白相关产品具有巨大的潜力和广阔的市场前景。

Abstract:The contents of nutritional components and amino acids of Dictyophora echinovolvata pileus were detected using national standards analytic methods. The assessment results showed that the total content of amino acids and essential amino acids in D. echinovolvata pileus was 31.34% and 12.95%, more than twice of the edible part of fruiting body, but the chemical score(CS)of D. echinovolvata pileus was lower. Amino acid score(AAS), essential amino acid index(EAAI), biological value(BV), nutritional index(NI)of protein was respectively 65.71, 76.58, 71.77 and 29.05, which were higher than that of edible part of fruit body. The results indicated that D. echinovolvata pileus was a suitable raw material for extracting proteins with high nutritive value, great economic potential and market prospect.
