摘    要:合浦绒螯蟹(Eriocheir hepuensis)主要分布在广西沿海,具有重要的经济价值和养殖潜力,尚未见合浦绒螯蟹可食率和营养组成的报道。本研究以长江水系野生中华绒螯蟹(Eriocheir sinensis)为对照,测定和比较了野生合浦绒螯蟹和中华绒螯蟹成蟹的可食率、色度值、总类胡萝卜素含量、常规营养成分和脂肪酸组成。结果显示:合浦绒螯蟹雄体总可食率显著低于中华绒螯蟹雄体,但肝胰腺指数、性腺指数和出肉率无显著性差异;无论雌雄,合浦绒螯蟹蟹壳湿样的a*值和b*值均显著高于中华绒螯蟹,合浦绒螯蟹雄体肝胰腺的总类胡萝卜素含量显著高于中华绒螯蟹雄体;合浦绒螯蟹雌体性腺中水分含量显著高于中华绒螯蟹雌体,而合浦绒螯蟹雌体肌肉中脂肪含量显著低于中华绒螯蟹雌体,合浦绒螯蟹雄体肌肉中水分含量、蛋白质含量显著低于中华绒螯蟹雄体;合浦绒螯蟹雌体肝胰腺中ΣSFA、肌肉中C18∶1n、ΣMUFA、DHA/EPA和卵巢中C18∶0、C20∶1n9含量均显著高于中华绒螯蟹雌体;合浦绒螯蟹雄体肝胰腺中C22∶16n3、ΣPUFA显著高于中华绒螯蟹雄体。综上,合浦绒螯蟹和...

Abstract:Hepu mitten crab (Eriocheir hepuensis) (The following abbreviation HP) is mainly distributed along the coast of Guangxi. It has important economic value and breeding potential. There is no report on the edible yield and nutritional composition of HP. Therefore, this study used wild Chinese mitten crab (Eriocheir sinensis) (CJ) in the Yangtze River as a control to determine and compare the edible rate, color parameters, total carotenoid content, proximate composition and fatty acid composition of wild HP and CJ adult crabs. The results showed: (1) The gonadal index of HP female was significantly lower than that of CJ females (P<0.05), but there was no significant difference in the total edible rate between Hepu mitten crab and Chinese mitten crab (P>0.05). (2) Regardless of male and female, the a* and b* values of the wet carapace of HP crab were significantly higher than those of CJ (P<0.05); the total carotenoid content of HP male hepatopancreas was significantly higher than that of CJ male (P<0.05). (3) The protein content of hepatopancreas and muscle of HP female and the lipid content of ovary were all significantly higher than those of CJ female (P<0.05); the moisture of HP male in muscle was significantly lower than that of CJ male (P<0.05). The protein content was significantly higher than that of CJ male (P<0.05). (4) C22: 6n3 (DHA) in HP female hepatopancreas, C18: ln, DHA, C22: 6n3 (DHA) / C20: 5n3 (EPA) in muscle and C18:0 and C20: 1n9 in ovaries were all significantly higher than CJ female (P<0.05); HP male hepatopancreas contained higher C22:5n3 and DHA while gonads had higher C22:5n3 and n-3/n-6 ratio than CJ male(P<0.05). In summary, similar edible yield is found between HP and CJ, but there are differences in proximate composition, carotenoid content, and fatty acid composition. This may be related to their genetics and growth environment.
