一种莲籽淀粉颗粒特性的研究

摘    要:以湖北产干莲籽为研究对象,采用水提自然沉降法自制莲籽淀粉,研究了莲籽淀粉颗粒的形态、大小、偏光十字、晶体结构等特性。研究结果表明,莲籽淀粉颗粒表面光滑、大小不一,大多数呈卵圆形,偏长,少数为圆形;莲籽淀粉的粒径分布相对集中,颗粒之间的粒径差别相对较小,粒径分布区间为5~30μm,中位粒径D50为11.432μm;颗粒具有环层结构,有明显的轮纹;具有清晰的偏光十字,有的呈"十"字形,有的呈"X"形,都交叉于颗粒中心;结晶结构属于A型,结晶度为30.71%。

Abstract:Taking the dry lotus seeds produced in Hubei as material, the homemade lotus seed starch was extracted by the water-extracted natural precipitation method, and the granular characteristics of the lotus seed starch was studied in this paper. The results showed that, the starch granules of the tested lotus seeds had smooth surface, and most of them were oval and long, but a few were round. Its diameter distribution was relatively concentrated, which were ranged from 5 p,m to 30 p,m, and the median diameter (D50) was 11.432 μm. The granules had obvious annulation and polarization cross, all of which crossed the granule center. The crystal structure of lotus seed starch was type A and its crystallinity was 30.71%.
