辣椒干燥速度的研究

摘    要:对辣椒的远红外线干燥及热风干燥速率进行比较研究.结果表明,远红外线干燥辣椒速率显著高于热风干燥,利用远红外线干燥辣椒时,风速0.4 m/s,温度70℃条件下干燥速率最快,时间最短,干燥后红色度及明度减少量最少.

Abstract:Compared far infrared drying and heated air drying for red pepper.The results showed that drying speed of red pepper adopting far infrared drying is much faster than that of red pepper adopting heated air drying.However,when the wind speed is 0.4 m/s and drying temperature is 70 ℃,the drying sppeed of red pepper is the fastest,the total drying time is the shortest and redness difference and lightness difference is the smallest.
