摘    要:在从鸡肠道中成功分离出一株动物内源酵母菌的基础上,对其进行了高密度发酵培养研究,获得了OD680nm为48.1的酵母菌发酵液。通过将酵母菌发酵液饲喂肉鸡,研究了其对肉鸡生长和鸡肉品质的效应。结果表明,每天每只鸡通过饮水饲喂0.5mL酵母菌,在肉鸡的一个饲养周期42天内,每只肉鸡的平均重量比对照组多增重193g,增重率达7.7%,其中公鸡多增重163g,增重率为5.9%;母鸡多增重224g,增重率为9.9%,说明酵母菌对母鸡的增重效果要好于公鸡。同时发现,投喂酵母菌后,可以将肉鸡的料肉比从1.685降低到1.567,降低率达7.0%。进一步研究发现,饲喂酵母菌的鸡肉品质有明显提高,其中粗蛋白含量、总游离氨基酸含量、必需氨基酸含量和风味氨基酸含量分别比对照组提高了4.0%、23.6%、4.2%和32.0%,说明投喂酵母菌不仅可以显著提高肉鸡的生长速度、降低料肉比,而且可以大幅度提高鸡肉的品质和风味。

Abstract:An animal endogenous yeast strain was isolated from the intestinal canal of dorking.With fermentation of the strain,fermentation broth of OD680nm 48.1 was gotten.The effect for developing growthrate and quality of dorking after fed with the broth was studied.The result showed that the average weight of dorking fed with 0.5 mL fermentation broth for each everyday was 193 g more than that of the control group and the percentage of increase was 7.7%.The data for cock was 163 g and 5.9%,while that of hen was 22...
