摘    要:以我国农产品中有机磷和氨基甲酸酯类农药残留情况为背景,结合酶抑制率法的检测原理,从检测标准、样品前处理、酶及试剂盒产品、仪器设备等方面分析了酶抑制率法存在的问题、研究及应用情况,并对未来如何改进酶抑制率快检方法进行展望,为提升我国食品安全快速检测水平提供参考。

Abstract:With the continuous expansion of pesticide types, application scope and frequency, rapid detection of pesticide residues has become a research hotspot of current pesticide residue detection technology. The enzyme inhibition method is widely used by grassroots because of its simplicity and convenience. In this paper, problems, research and application of enzyme inhibition method was analyzed from the aspects of detection standards, sample pretreatment, enzymes and kit products, and equipment, based on the background of organophosphorus and carbamate pesticide residues in agricultural products in our country, combined with the detection principle of the enzyme inhibition method. How to improve the enzyme inhibition rapid detection method in the future was prospected. This paper could provide reference for improving the level of rapid detection of food safety in our country.
