摘    要:微生物污染贯穿乳品工业的各个环节,对经济发展和人类健康构成威胁。对微生物的有效控制是乳品质量与安全重点关注的问题,基质辅助激光解析电离飞行时间质谱(MALDI-TOF MS)在乳品安全监管工作中,具有快速、准确、稳定、灵敏以及成本低等特点,因而受到广泛的关注与应用。深入了解MALDI-TOF MS技术在乳品微生物中的应用途径与策略,可以有效提升乳品安全监管质量与效率。本综述旨在讨论 MALDI-TOF MS技术在乳品微生物中的实际应用,对MALDI-TOF MS技术在乳品微生物中的发展趋势和应用前景进行分析和探究,为应用MALDI-TOF MS技术深入研究乳品微生物相关问题提供了理论依据。

Abstract:Microbial contamination runs through all aspects of the dairy industry,being a threat to economic development and human health. Effective control of microorganisms is an important concern of dairy quality and safety. MALDI-TOFMS technology has the characteristics of rapidity,accuracy,stability,sensitivity and low cost in dairy safety supervision,so it has received extensive attention and application. An in-depth understanding of the application approaches and strategies of MALDI-TOFMS technology in dairy microorganisms can effectively increase the quality and efficiency of dairy safety supervision. This review aimed to discuss the practical application of MALDI-TOFMS technique in dairy microbes,the development trend and application prospect of MALDI-TOFMS technology in dairy microorganisms were analyzed and explored,which provided a theoretical basis for the application of MALDI-TOFMS technology to deeply study dairy microorganism-related issues.
