甲鱼营养液提取方法的研究

摘    要:将甲鱼(中华鳖)用适当的方法处理后与原蜜混合,然后采用三段式水解法制取甲鱼浸提液,成功地解决了以往甲鱼浸提液所存在的有异味,易分层,可溶性营养成分含量低,稳定性差等问题。同时,确定了合理的浸提液制取条件,为进一步生产高质量的甲鱼营养口服液或其他甲鱼精加工保健食品奠定了基础。本实验所制取的浸提液色泽浅黄,风味良好且口感均匀细腻,游离氨基酸含量可达872.8mg/100mL。

Abstract:Soft shelled turtle was processed and mixed with honey. Then the mixture was hydrolyzed using a three stage method to prepare soft shelled turtle nutritional liquid. Using this procedure, problems existed in previous products, such as unpleasant odor, precipitation, low nutrient content and low stability, were solved. Optimal extracting conditions for preparing the nutritional liquid was also screened, which provides useful reference for developing new and high quality soft shelled turtle products.This product prepared in the lab has a good taste and flavor, yellowish in color with free amino acid content up to 872.8 mg/100mL.
