莱芜猪肌肉肌苷酸和肌内脂肪含量研究

摘    要:采用高效液相色谱技术测定了莱芜猪、大约克和杜洛克猪背最长肌肌苷酸含量,按照NY/T821-2004的方法测定肌内脂肪含量。结果表明,与杜洛克和大约克相比,莱芜猪肌肉肌苷酸含量显著提高58.96%-57.09%(P〈0.05),肌内脂肪含量极显著提高(P〈0.01)。

Abstract:Inosinic acid and intramuscular fat content of longissimus muscles in Laiwu pigs,Yorkshire and Duroc were respectively determined with HPLC method and technical regulation for determination of pork quality(NY/T821-2004).The results indicated that compared with Duroc and Yorkshire,inosinic acid content in the muscles of Laiwu pigs was remarkably increased 58.96-57.09%(P<0.05),intramuscular fat content was evidently enhanced(P<0.01).
