乙醛、丙醛和反式石竹烯在黄瓜发育和贮藏过程中的变化

摘    要:采用固相微萃取(SPME)气相色谱(GC)法,对黄瓜在20 ℃下贮藏和果实发育过程中乙醛、丙醛和反式石竹烯的含量变化进行了分析。结果表明,反式石竹烯在果实贮藏3 d后全部消失,而在发育过程中其含量并不随发育天数的变化而变化。乙醛和丙醛则随着果实发育和贮藏天数的增加而逐渐减少,丙醛的变化趋势更为明显。

Abstract:The changes of acetaldehyde and propionaldehyde in cucumber fruits were analysised by solid-phase mircroextraction (SPME)gas choromatography during fruit development and storage at 20 ℃ . The results showed that trans-caryophyllene disappeared after fresh cucumber were stored 3 days, the contents of trans-caryophyllene had no regular changes during fruit development, the content of acetaldehyde and propionaldehyde decreased gradually with fruit development and storage at 20℃ ,the content changes of propiona...
