杂交糯稻的稻米品质

摘    要:以通过核辐射诱变技术育成的杂交糯稻及其相应的非糯稻近等基因系为材料,测定了其粗蛋白、氨基酸、矿物质元素含量和脂肪酸组成分,并比较分析了杂交糯稻和常规糯稻荆糯6号的稻米品质.结果表明:杂交糯稻粗蛋白含量,各种氨基酸含量和氨基酸总量,Ca、Cu、Fe含量以及饱和脂肪酸含量均高于相应的非糯稻,而Mg含量比相应的非糯稻低,Na和Mn含量变化没有规律;杂交糯稻的稻米品质各项指标与荆糯6号相似.

Abstract:With the waxy hybrid rice developed from radiation induction technique and its non-waxy near-isogenic lines as materials,nutrition components including crude protein,amino acid,mineral elements and fatty acids were detected,and the cooking and eating quality of waxy hybrid rice and Jinnuo 6 were analyzed.The main results were as follows: the contents of crude protein,all kinds of amino acids and total amino acids,Ca,Cu,Fe,saturated fatty acids were higher in waxy hybrid rice than those in its corresponding non-waxy ones;but Mg content in waxy hybrid rice was lower,and there were no regular changes in the contents of Na and Mn;quality indexes of waxy hybrid rice were similar to the conventional variety Jinnuo 6,and there existed difference in amylose contents among the waxy hybrid rices,varied from 2.0% to 2.3%,and the protein content ranged from 11.1% to 12.5%.
