烟台海域裙带菜营养成分分析及评价

目的]对烟台海域裙带菜（Undaria pinnatifida）的营养成分进行全面分析,为裙带菜的深加工和综合利用提供依据。方法]对采自烟台海域的裙带菜的一般营养成分、蛋白质的氨基酸组成、矿物质含量、褐藻多糖含量和甘露醇含量进行测定与分析。并将一般营养成分与采自大连海域和浙江海域的裙带菜进行比较。结论]烟台海域裙带菜的主要功能性成分褐藻酸,占藻体总量的29.45%,蛋白质含量达14.90%。烟台海域氨基酸组成均衡,赖氨酸是限制性氨基酸,谷氨酸、天门冬氨酸、丙氨酸和亮氨酸的含量很高,其中,谷氨酸和天门冬氨酸之和占氨基酸总量的25.17%,在非必需氨基酸中占有很大的比重;呈味氨基酸谷氨酸、天门冬氨酸、甘氨酸和丙氨酸占氨基酸总量的55.80%。烟台海域矿物质含量很丰富,是矿物质的营养库。结论]该研究可为生产相关的保健食品和提高裙带菜的利用价值提供依据。

Analysis and Evaluation on Nutritious Componentes of Undaria pinnatifida in Yantai Sea Area

Objective] The nutritious componentes of Undaria pinnatifida in Yantai sea area were analyzed and evaluated,to provide basis for the deep processing and comprehensive utilization.Method] The normal nutritious components,amino components of protein,mineral content,fucoidan content,and mannitol content of Undaria pinnatifida samples collected from Yantai sea area were determined and analyzed,and the normal nutritious components were compared with samples from Dalian sea area and Zhejiang sea area.Result] The main functional component alginic acid and the protein contents were 29.45% and 14.90% of the total Undaria pinnatifida samples weight,respectiuely.The amino components of Undaria pinnatifida was good proportionate,Lys was limiting amino acid(LAA),but the content of Glu,Asp,Ala and Leu was high.Thereinto,the content of Glu and Asp accounted for a large proportion of non-essentia1 amino acid(NEAA) with 25.17% of the total amino content,and the content of flavor amino acids,Glu,Asp,Gly and Ala,was 55.80% of the total amino content.The Undaria pinnatifida was rich in mineral,was the mineral nutritious pool.Conclusion] The study can provide basis for producing related healthy food and improving the use value of Undaria pinnatifida.
