特种野猪的肉质特性研究

摘    要:为了给特种野猪的肉质开发利用提供理论依据,进行了含75%野血的特种野猪与家猪的肉质特性比较分析。结果表明:含75%野血的特种野猪肉肉质鲜美、营养丰富,与家猪肉相比,其蛋白质含量高、胆固醇含量低、氨基酸及鲜味氨基酸总含量高、肌内脂肪含量少、亚油酸及亚麻酸含量高。

Abstract:Comparative analyses of pig meat between special wild boar with 75% wild boar blood and domestic pig were carried out to provide theoretical basis for the development and utilization of special wild boar meat. Results showed that the meat of special wild boar with 75% wild blood was tasty and nutritious. Comparing with domestic pig,the meat of special wild boar had higher protein,higher total amino acid and flavor amino acid,higher linoleic acid content and linolenic acid but lower cholesterol and intramusc...
