羊骨降血压肽制备工艺的研究

摘    要:试验以羊骨为原料,采用酶技术,优选降血压活性最高的酶及其最佳酶解条件。结果表明:中性蛋白酶水解羊骨所得的ACE抑制率最高,达66.0%,其酶解条件为:酶浓度为100 U·g-1、底物浓度为25%、pH值7.0、温度为50℃、时间6 h。

Abstract:This experiment used sheepbone as the raw material,and assessed antihypertensive peptide to select the best enzyme from the seven kinds enzymes and select the best enzymatic hydrolysis condition.The result showed that the neutral proteinase ACE inhibitory rate was highest and achieves 66.0%.The zymolysis condifion was as follaws: enzyme concentration 100 U·g-1,substrate 25%,pH 7.0,temperature 50 ℃ and duration 6 h.
