春桃柿子在果蔬蓄冷剂储藏中的生理变化

摘    要:以春桃柿子为试材,将果蔬蓄冷剂应用于春桃柿子的贮藏保鲜。通过对春桃柿子贮藏过程中外皮韧度、可溶性固形物、可滴定酸、软腐率和失水率5个品质指标进行研究。结果表明:蓄冷剂有助于维持春桃柿子的原有风味,减缓其相关品质的降低。

Abstract:The paper studied the storage of 'Chuntao' tomato treated by coolant of vegetable and fruit.According to analyze and vest brittleness,total soluble solids,titratable acidity,soft-rot rate and water loss rate of tomato during storage.The results showed that treatment of tomato by coolant was helpful to maintain the intrinsic flavor and suppressed decrease of storage quality of tomato.
